Executive Chef Isaac Olivo is a graduate of the famed Le Cordon Bleu College of Culinary Arts. His remarkable career has encompassed some of the finest restaurants in the world, including Chef Tom Colicchio’s Craft, Michael Mina’s Bourbon Steak, and the Michelin 3-Star Jean-Georges; the Forbes 5-star Peninsula Hotel in New York City, and the renowned Mayflower Inn Relais & Châteaux. Chef Isaac’s passion for utilizing only the finest seasonal, local ingredients shines through in his contemporary American cuisine and Chef’s Tasting Menus, which change daily.
Executive Pastry Chef
Pastry Chef Christos has come to Chatham Inn Relais & Châteaux directly from Greece. Formally educated in Pastry at Ecole Ritz Escoffier Paris, his impressive career has spanned multiple 5-Star hotels and Michelin Star restaurants in Europe. Most recently, Chef Christos was the Executive Pastry Chef at Nammos in Mykonos, Greece, and Nammos Courchevel 1850 Restaurant in Courchevel, France.
