Isaac Olivo
Executive Chef
Executive Chef Isaac Olivo is a graduate of the famed Le Cordon Bleu College of Culinary Arts. His remarkable career has encompassed some of the finest restaurants in the world, including Chef Tom Colicchio’s Craft, Michael Mina’s Bourbon Steak, and the Michelin 3-Star Jean-Georges; the Forbes 5-star Peninsula Hotel in New York City, and the renowned Mayflower Inn Relais & Châteaux. Chef Isaac’s passion for utilizing only the finest seasonal, local ingredients shines through in his contemporary American cuisine and Chef’s Tasting Menus, which change daily.

Whitney Stancil
Pastry Chef
Whitney graduated from Johnson & Wales University with a Bachelors degree in Foodservice Management and an Associates degree in Baking and Pastry Art. Whitney’s talents were quickly noticed in the culinary community, and her career progressed rapidly. In 2017, Whitney was hired by Executive Chef Isaac Olivo, and became the Pastry Chef at the Mayflower Inn Relais & Chateaux. In 2021, Whitney rejoined Chef Isaac at Chatham Inn Relais & Chateaux, bringing her talents to create visually stunning and decadent pastries and desserts to Cuvée.
